New (to be) owner want to dual dual extrusion advce...

I've ordered a new Mk3S+ kit.
I eventually want to do dual extrusion with soluble support.
Should I build the printer stocke, or should I put on the multi material kit as I'm building it?

Is three a different dual extrusion s9lution than the multi material kit as I don't feel I need more than two filaments?

Build the MK3S+ kit as stock first and get some printing experience with prusa supplied, your own, and third party models on the stock printer first in PLA, PETG, and other filament types first.  Remember to be gentle when assembling your printer and to print spare parts for at least the extruder assembly in the recommended filament type (PETG and ASA) and colours.

When your happy with your printing on the stock printer in various filament types then upgrade to the MMU2S or its later version by building the MMU2S first before you take your MK3S+ apart. This will keep your MK3S+ working to print any required spare/replacement parts until you are ready to finish the upgrade.

Also, remember that a MMU2S upgraded MK3S+ printer requires an MMU2S aware version of the MK3S+ firmware to be installed in the MK3S+ part of the printer; hence the separate MK3S+ & MMU2S firmware package. Perform the relevant firmware upgrades to both the MK3S+ and the MMU2S as the final part of the upgrade.

This is just my opinion so you take it for what it's worth, I would under no circumstances recommend that someone new to 3d printing buy an MMU or even a dual extruder machine of some other make or model. Their is so much to learn, so many problems to over come, it takes experience you gain it slowly, it's easy to become excited about what printing multiple materials promises and it's all possible, but it takes time and experience to get to that point, it's not about just buying the equipment and pressing a button.

With that said my advice to you is, get your Mk3S+ kit, assemble it, learn all of its ins and outs, learn about all the different material choices and the differences between the same type of material from different manufactures, learn what a well constructed model is verses one poorly constructed, the list goes on. get your feet wet first with a single extruder, but keep your multi extruder dream placed neatly on the desk in front of you as a goal to achieve.

This is not my first printer.....
I've had original makerbot, utilimaker 1 and a Taz 4.

I have and use regularly a FORM2.

I asked some of my technical twitter friends/followers for advice on a FDM printer as the form 2 is slow and expensive to use.
They unanimously recommended  Prusa.   What I really want is a larger format printer (waiting for the large Prusa) so I ordered a kit to get familiar with the Prusa ecosystem. 
I only want multiple materials for soluble support, I don't want/need colors, or other multi materials.
It may be that FDM printers/slicers have advanced enough in the last 3 years that one does not really need soluble support, but its on my want to have list. the Prusa Multi Material solution seems overly complicated and I wonder if dualt, lifting hotends/extruders might be a better solution.....The taz 4 I abandoned after too many nozzle clogs and print detachments. 

The Form 2 has been an Appliance, ie it just works correctly almost every time (95%)

I've contemplated getting a duet board and retrofitting /rebuilding the Taz 4, alas  going to try the Prusa first.

Also I have a Tormach mill with 20000 rpm ISO-20 spindle and  a fully CNC metal lathe as well, so not new to fabricating...

I would echo the suggestion to first build a stock MK3S/+ type machine and get plenty of experience with it before adding the MMU2S.

Even if you have general experience in 3d printing, there's quite the learning curve to the Prusa, as there is with any machine that is new to you.  I'm very glad I waited a couple of months before adding the MMU.

I think you are looking for www.stratasys.com and made a wrong turn at Albuquerque, I haven't watched your videos but your thumbnails & use of formlabs equipment suggest your looking for a more industrial quality tool then Prusa offers, as well your original post very much eludes to you being a new user (with limited experience), not a seasoned pro who has the experience to decide if the machine is good for them or not.

On first exam I probably would have chosen something other than Prusa, alas the support and printers were very highly spoken of by people whose opinion I trust. Anything that requires real precision and  fits on the FORM2 will probably still get printed there....

I'll  learn something in any case....
