This most likely has nothing to do with Octoprint. Try printing from the SD card. I am sure that the problem will be the same there. As @cwbullet already noted - defective thermistor. Take a multimeter and measure the internal resistance of the thermistor. At 25 degrees C. room temperature it should show an approximate value of 100kohms. Possibly there is also a thermistor loose contact or short circuit.

That is good advice.  if it prints from the SD card - it might be octoprint.

Since this happened and after cleaning up everything I did measure the thermostat and it was correct. 

I put everything back together have have been running with no issues from the SD card since then. One day I will update and reconnect the Octo-print.
