Modify mesh bed level with offsets for each probe point.
Is there a way to modify the mesh bed level to put in some offsets for specific areas of the bed?
I want to use the entire area of the bed to print multiple models, the bed levelling using the first version of the PINDA probe + 7x7 mesh does not seem to do a good enough job so I end up with a smaller effective print area.
Would a pinda v2 help?

I think you are mistaking probe points with printable area. The two have nothing to do with each other IMO. You can bed things as long as all elements fit within the bounding box. Your skirt and brim cannot go out of those lines - which extend up 200MM - so no part of the print can be outside of the volume bounding box. The whole bed is printable.
