Extruder Housing Leveling Off

I bought the MK2S kit and assembled it myself, after lots of fun troubleshooting. I have had a series of very successful prints and then randomly followed by hours of not being able to get PLA to stick for the first layer. After walking away for a bit and coming back, it seems to be working just fine.

I'm wondering if it is due to the off leveling of my extruder housing. I've tried to level it, but I have no idea why it is even off.

Every other component seems to be almost perfect.

FYI, a bubble level is a bad way to measure this considering your table and floor must be level too. that being said... you're not properly leveling it, you're across the motor and plastic part and your level isn't even flush to one or the other, it looks tilted... if not use a square against the frame and bed and see if it's 90 degrees.... should be perpendicular.
