Sudden under extrusion, extruder clicking and nozzle temp lower than what is shown

My mini has been pretty awesome and trouble free until this morning. Finished a 12 hour print over night, but when I started a new print this morning, I got the issues listed in the topic title.

I've been troubleshooting this all morning. Nozzle swapped (no clog), extruder gears cleaned, checked the hot end for obstructions and even swapped out the Teflon tube (which looked fine). On a whim, I measured the hot end temp with an IR thermometer. The nozzle was set and was reading 215C. The thermometer shows 96C-98C. 

Not sure what to check next. Any help is appreciated!

Seems to be fixed. Apparently my problem was this:

Weird that the problem waited so long to materialize and it went bad seemingly overnight. Working well right now.
