In Prague on holiday... is Prusa worth visiting or is it all private business?

If it's of interest, check it out. I'd definitely check to verify they're open to the public on the days of your visit and see if anything is going on.
That said, I'm not personally going to travel that far to spend a big slice of time geeking out over tech. Prague is apparently known for other things as well.

There is a show room and service center in Prague, directly in Prusa Research HQ.
Opening hours: MO-FR 7:30 - 18:00
There is also PrusaLab (Makerspace). Search the web for details.
